If you've seen enough ride along cop shows skilled cops know how to subdue and disarm a suspect with physical force or even through his compliance by verbal means. I don't know what that fat guy in Louisiana could really do while being wrestled down by two officers under normal circumstances. Immobilize the suspect and remove his weapon.
