I'm strictly a 2ch man but thinking of purchasing a new DVD/CD such as an Oppo BDP 83 which is 2/5.1/7.1. Would I lose anything sonically by using only 2ch?

No, you just won't be able to use the SACD surround layers that are mastered for surround

Here's a concise review by Audioholics:

https://www.audioholics.com/blu-ray-and-dvd-player-reviews/oppo-bdp-83

Don't be dismayed by the distortion comments. Those are simply meaningless in the bigger scheme of things - as in - measured on the analog outputs.
And you don't lose anything dedicating the machine to 2-channel only.

I've been an Oppo fan for years and they are solid.
They are headquartered in Silicon Valley ... regardless where the machines are assembled.
Buy with confidence that you'll get a performance built machine.

That's the only issue I have with my dbx DX5, one of these days I will have to open it up and put a new belt on it. It only does it when I first turn it on, then it works fine
